Switchback Wine Dinner
Tuesday October 20th
Dear Friend of the Tavern, In 1914, Eliza and Mads Peterson bought a hundred acres at the mouth of Dutch Henry Canyon in Calistoga. They planted plums, rode out Prohibition, and raised a family that would farm that same ground for five generations. When the orchards were replanted to vines in the 1990s, one stubborn great-aunt, Carrie, refused to let anyone touch her old block of Petite Sirah. Her niece Kelly never forgot it, and in 1999 the family bottled its first vintage under the name Switchback Ridge. A century of Napa farming, a family that does things its own way, and a stubborn streak worth toasting. We think that story would feel right at home in Texas. So we are pulling up a long table and inviting you to An Evening with Switchback Ridge, a four-course dinner built around the estate-grown Merlot, Cabernet Sauvignon, and Petite Sirah from the Peterson Family Vineyard. Our kitchen has written every course to meet the wine where it lives: smoke and plum for the Merlot, mesquite and cocoa for the Cabernet, and slow-braised richness for the Petite Sirah. Expect generous pours, the story behind each bottle, and the kind of unhurried evening that is hard to find on a weeknight. Seating is intentionally limited so every guest gets the full experience.

Stringer Cellars Wine Dinner
Thursday November 5th
Dear Friends of the Republic, In 1836, Texans drew their own lines on the map. Nearly two centuries later, a family winery in Calistoga, California decided not to draw any lines at all. Stringer Cellars calls itself “a winery without boundaries.” Rather than tie itself to a single valley, the Stringer family follows great fruit wherever it grows: the mountain slopes of Napa and Sonoma, the cool coastal hills of Santa Barbara, and the rugged reaches of Mendocino. The result is a collection of wines that are both powerful and elegant, each one carrying a clear sense of place. On Thursday, November 5, we are bringing that independent spirit home to Republic Texas Tavern, and Stringer Cellars owner Chris Meyer will be joining us for the evening. It is a rare chance to meet the person behind the wines, hear firsthand how each bottle came to be, and raise a glass together. We would be honored to have you at our table. The evening begins at 6:30 with a welcome reception. At 7:00 we will sit down to a four-course dinner from our culinary team, with each course built around its own Stringer Cellars wine. Our kitchen is curating a master blend of flavors for the table, but the wines will lead the way. The evening moves from bright, sunlit California whites through layered reds to the deep, structured mountain Cabernet the winery has built its name on, and every pour comes with the story behind the bottle. Like the best Texas evenings, this one is meant to be unhurried: good wine, honest food, and conversation that lingers. Seating is intentionally limited to keep the night intimate, so we encourage you to reserve your place early!
